Tonight's cooking adventure... in the microwave! Meal #2

So tonight for dinner, I decided to make a recipe called Fiesta Chicken Casserole
(I did this instead of the stacked enchilada recipe I was going to make.)

The ingredients:

3 chicken breasts, cut into small bite sized pieces
1 small onion ( i used 1/2 since all the onions I have are huge)
2 cans of cream of mushroom soup
1 can of salsa verde
2 cups shredded cheddar cheese
12 corn tortillas

The following pic is the Tupperware that I used to make this recipe. Not pictured.. is the knife, large Pampered Chef measuring cup, and the cutting board. I used to sell Pampered Chef, so I have a TON of it!

 
** Stack Cooker, Thatsa Bowl, Saucy Spatula, and Quick Chef**


I chopped up the half of the onion using the Quick Chef.


I cut up the chicken into small pieces, put them in the Thatsa Bowl, and mixed in the onion.

Next I added the salsa verde, and the 2 cans of cream of mushroom, then mixed all that up.

Next I added the 2 cups of cheddar cheese, and the 12 corn tortillas cut up into bite sized pieces.

Mixed that up really well!

Next I put it all into my Stack Cooker, amazed that it all fit! I stuck it in the microwave for 10 minutes, took it out, stirred it up, then put it back in for another 10 minutes.

Here is the end result! It smelled so good I couldn't wait to try it!


Here is my serving! I put sour cream and more cheese on top, and it was very good!

Even my daughter liked it!


This made so much food, I am sending some up with my dad tomorrow for him, my mom, and my grandma, and there is still plenty left over here for my husband, and myself if I want it for lunch tomorrow. I know for sure this will be something I make for any friend gatherings that may happen. 

Now, after having made this recipe, I have decided there are a few changes I plan on making to it.

Instead of cream of mushroom, I will probably change it to cream of chicken. 

I also think to give it a little bit more bite, I will try adding green chiles to it. I cant make it too spicy, otherwise my daughter wont eat it.

Why did I make this recipe you ask?

well... I had EVERYTHING for it! I was going to make the stacked enchiladas, but I had a jar of salsa verde sitting in the fridge that I needed to use, and this recipe sounded so tasty! And it took me all of maybe 30 - 40 minutes to prepare and cook. Love a fast, tasty meal!

Weekly Meal Planner

So.. in an effort to become more organized, and cut back on spending, I have decided to try out the whole weekly meal planning thing. I know this is going to be hard for me to stick to, since I tend to decide what to make last minute, or I may change my mind.

I am going to try using a basic meal planner that I got from:

Now, I really wanted to have an ingredients list instead of a shopping list, so I may end up creating my own meal planner and changing it to how I want it. I want to try and limit what we have to buy to very little, besides maybe the normal bread, milk, produce, etc.

Speaking of produce, I also have started buying produce from Bountiful Baskets. I've only done it 1 week, and had more fruits and veggies then I can handle! You got 50% fruit and 50% veggies. I paid $15. Check out the site if you want more info.

 So back on topic... I am going to sit down and see if I can fill this out tonight.. the only night that will be hard is Wednesdays, since I have school. I guess I can just put Jay's choice (that's the husband!)

So this is what I came up with:

Monday:
Left over chicken tortilla soup

Tuesday:
Layered enchiladas (to be made in my stack cooker!)

Wednesday:
Jay's Choice

Thursday:
Spaghetti with Italian sausage and garlic toast

Friday:
Chicken & Dumplings

Saturday:
Bean & Ham soup with cornbread

Sunday:
Pasta with Alfredo sauce and garlic toast

As of right now, I have no need to go to the store for this coming week, considering I don't get paid till the 31st, that is a good thing!

As for breakfasts and lunches, I am currently on the Kellog's 2 week challenge, so I have my breakfast and lunches covered, hubby has to figure out stuff for him and our daughter. Will probably consist of peanut butter and jelly sandwiches, grilled cheese, mac n cheese... breakfast for them is covered too, there is cereal and oatmeal to eat.

I will blog on the layered enchiladas, with pictures, since I will be using my stack cooker. Anytime I use Tupperware I will probably blog about it.

Once I create my own dinner planner, I will probably post that as well.

Adventuring into microwave cooking!

So, since I have become a Tupperware consultant, I started to adventure into the microwave cooking scene. Not microwave reheating, but microwave cooking.


In my new Consultant Kit I received this awesome item called the Stack Cooker.

I ended up being able to order the colander piece that goes with it.


So I had a friend come over that Saturday and we made monkey bread in it, and we cooked 2 whole chickens in it (not at once!). The whole chickens were about 5 pounds each, and normally take 30 minutes in the Stack Cooker, but my microwave is small, so it took about 40 minutes.


Wow, did those come out NICE and juicy or what!


Anyway, I havnt had a chance to cook with it again until tonight (except to make another batch of monkey bread)


I bought a recipe book from one of my Tupperware Directors, and have just now finally be able to make a recipe out of it. It was the choice between stacked enchiladas or chicken fajitas. My husband chose chicken fajitas.


I defrosted 3 large chicken breasts part way, then cut them into strips, and set them out to defrost the rest of the way. I also cut up half an onion into strips as well. The recipe calls for red, green, and yellow bell peppers, cut into strips, but I purchased a frozen bag of them. So prep work done, hubby, baby, and I went on an afternoon walk. By the time we got back I was ready to make dinner!

I put the colander piece in the stack cooker, then placed the chicken and onions in that.


I put the lid on, then stuck it in the microwave for 5 minutes.


After 5 minutes, I took the Stack cooker out (no mittens needed as long as you grab the handles!) and I threw in 1 tablespoon of chipotle seasoning, mixed it up, and then put the frozen bell peppers on top.


I stuck it back in the microwave for another 5 minutes and.. TADA! Dinner is done! I heated up some corn tortillas, and put cheese and salsa on the table, and YUM!

Have to say, the chicken turned out a little dry, but it might have been cause I cooked it a tad too long.
Also, using the colander part of it made all the juices from the chicken collect at the bottom, so that could have been the reason the chicken was dry, or not.


So My hubby and I both at 2 tacos each, and my daughter (who is 17 months old) had bits n pieces of it. There is a TON left over, so I am sure this could feed a larger family, or even be great for a small get together with friends and/or family!

I ordered the Tupperware Recipe book for the stack cooker, so I can't wait to see what they have in there!
